I am also a new MAC user and have been converting my photos over to the MAC.
I am using iphoto 11 but have the same concerns. I have a lot of photos like you do but can't see them individually outside of iPhoto. I have been re-organizing the photos on my old PC so that the organization is the same as the MAC and basically keeping 2 sets of photos. It's too much work though and would love an easier solution. Hope to hear the answer to this real soon.
