Nope, that utility just monitors your system and relays the information. I use it on my iMac. You don't really want to mess with the fans on your Mac, but the program smcFanControl can allow you do that, but be warned that messing with the fan could lead to increased temperatures that could lead to problems..
IStat Menu has facilities for setting fan speeds (won't turn them off but you can adjust how fast they go) - but I don't see the same choices in istat pro.
That's great to know IvanLasston, I really like iStat Menus to show the values on the menu bar as opposed to iStat Pro displaying it on the dashboard, but since I get essentially the same (what I care about at least) information with iStat Pro, I opted not to pay for iStat Menus and use MenuMeters which isn't nearly as pretty as iStat Menus..but works..
Like Ivan I've been using the pay version iStat Menus for several years although I have never felt the urge to control my fan speeds. It's best to let your Mac to set its own fan speeds as was designed by the Apple engineers.
