I changed an e-mail address some time ago but it kept on coming up as the default in Mail. I think that by removing it from the 'Previous Recipients List' when this happens I may have solved the problem.

Has anyone else had this problem or can comment on it please?

That should fix the problem. If it continues to appear then check Address Book for any contacts that may still have that address on their card. It should be possible to create a Group/Smart Group with every card containing that address. That way you do not have to manually search each card.

Issue resolved

Thanks to an earlier post by dakineyj who says

"In the mail app. go to the menu bar and select Window>Previous Recipients"

This will show all previous addresses. Highlight the one to be removed and choose 'Remove from the list'.

Job done.
