My question is this. I have Microsoft for Mac 2011 installed on a Mac Air, and I would like to see if it is possible to install Entourage 2008 only while Office 2011 still installed.
I'm fairly confident that the two can be installed side by side. When I upgraded to 2011, the 2008 install was left intact and in the bit of testing I did, it seemed to work (I think I only tried Word though). Give it a shot.

As Van stated, 2008 and 2011 can co-exist, however, keep in mind that the 2008 installer will overwrite some of the 2011 files. I don't think it will matter though.
How come your Office is still using an older version of Exchange? You need at least Exchange 2007 (or Exchange 2010) in order to use Outlook 2011.
Well I think it is better to not overwrite any files so we might just use the mail application built into Mac. Well as far as the Exchange version we have both the newer version of Exchange and the older one. We are in the process of changing all of users over to the new but with tens of thousands of email accounts using the old system it will take a while to migrate over to the new system. We also have to backup the old data just to make sure if something does happen we can revert back to the old
