I have a dual 2ghz G5 fitted with the standard ATI9600XT 128mb video card. Attached to this is an Acer AL1912 19" LCD monitor.

I have seen dual CRT monitor machines sharing a single video card. Is it possible to put another Acer AL1912 19" LCD monitor on my video card to have a single desktop across 2 screens? It's just that I know my monitor is 'capped' at 1280x1024... So will the dual monitor set-up have 1280x1024 or 2560x1024?

This is a puzzler to me - HELP!

Yes, you can connect 2 LCDs together, they don't even need to have the same size and resolution.
You will have the choice between mirroring (both screens show the same) or screen spanning (having the desktop going over from one screen to another). This will give you "virtually" a resolution of 2560x1024, but with a cut in the middle (the physical screen borders). And not all applications will use both screens in fullscreen mode. But you could for example have a movie running fullscreen on one, and continue working as usual on the second.
