I was wondering if you could upgrade the processor to an i5 in a 2007/2008 or maybe an early 2009 model because I think there is a new line of i processors coming out this year that don't need as much power?

a replacement processor would have to be "socket" compatible. i5 is not possible.
You need to match the processor family of the socket with the new processor.

Tell us the exact model, CPU speed, etc of your mini if you want more help.

I was just thinking of getting an older one because they're cheaper and I was wondering if you could upgrade the processor to a faster newer one.

The really old Minis (Intel) used a Socketed CPU, but the later ones do not. But as Gsahli said, you can't plug an I5 into a Core 2 Duo socket or board.
