I'm getting a new MPB and will upgrade the memory by way of 2 Crucial modules. The thing is, is it better to install them before I even turn on my MBP for the first time, or should I set it up first and then install the new memory?

Thanks in advance for the help. :)

Set the machine up first and make sure everything is running right before upgrading the memory. And always make a backup (use Time Machine) of your data before doing any kind of upgrade, including memory.
