Best way to migrate data

MB Pro 17", MB Air 13" 1.7Ghz Core i7, iMac 27" 3.1Ghz, iPhone 5, couple iPad 2s and a 3 + 20 more
I have a 16GB iPhone 4S, getting a 64GB iPhone 4S (completely out of space)

What's the best, easiest and most efficient way to move everything from iPhone -> iPhone ???

Apple makes this surprisingly difficult for some reason and it's utterly annoying.

I have ~5Gigs of Music, ~6Gigs photos, thousands of contacts and hundreds of emails in various accounts. Not to mention a few gigs in Apps.

I guess I just don't understand the question.

Wouldn't you just backup the old iPhone to iTunes and then "restore" this to the new iPhone?

Not sure how you come to the conclusion that this is "difficult" or "annoying" ...
