Need help downgrading an iPod touch from 5.0.1 to 5.0?

I am planning on jailbreaking my ipod touch 4g but it wont work on 5.0.1. Can someone please tell me if there is a way of downgrading to 5.0 without losing anything like apps and videos?

It can't be done. With iOS 5, once Apple stops signing a particular firmware, there's no going back (unless you have a very early 3rd gen device).
