I got an iPad from a good friend, that he got from some family members. It has a bunch of audible books on it and a few apps that were purchased, but not by me. If I apply the update to it am I going to lose all of that stuff? It gave some sort of warning when I tried to sync the apps/books in iTunes, and it said all the apps would be taken off the iPad. Is that true? Is there a way to manually drag these items off the iPad to my Mac, and then put them back on the iPad? Thanks for the help.

Afraid not. The iPad will be associated to your own AppleID from now on, so as you hadn't purchased those apps, you can't use them.
