I have 10.5.8 also. Try this:

HD/Users/YourUserName/Library/Preferences/com.apple.systemuiserver.plist

Find that file and move it to your Desktop.
Restart the computer.
Now see if you can set it to display the Date and Time, if it doesn't already.

The restart creates a new file where the old one was, set to defaults. The System User Interface Server is where menu bar settings live, so I'm told.

Great! Thanks for letting me know. It's nice to find out that a theory works out once in awhile.

Open system Preferences. Date and Time. Click on the Clock Tab. Look toward the bottom. Is show date checked? Here is a pic of mine.

too bad the uiserver plist didn't help you

Try a different user account to see if that's the problem.

Guess I missed his one comment.

Either one of are tips should have sorted this. I agree, try another user and see if the Date still does not show. Get back to us.
