Early next year I think that I will be going on a trip to the USA. If I was to buy a mini mac there and brought it back to the UK, would it work? Providing I got the power supply correct. The mouse, keyboard, monitor, net connection etc etc would all be UK bought.

Yes it would work just fine (you might want to change the language [when you first turn on the computer and the setup assistant runs])
