In general, yes, you can.
But, (and I'm guessing here since you didn't give us much detail) your computer may require a Snow Leopard install DVD that's newer than the usual $29 white DVD, because the computer came out after the retail DVD. Is this the problem you are experiencing?

Or download the carbon cloner and clone you're startup hd to the other HD .
Be sure what you select the source and destination drive correctly
To be sure after cloning restart you're computer while you hold the Option key down
Chose the clone Hd to start up .
If it is OK , go to System Preference and make the clone you're startup HD

How it will help me install snow leopard normal (non server version).
I tried to install but after installation it keeps asking me to restart and may be, not sure but think installation is crashing and not completing.

My point is that you can only install from a newer version retail DVD - which may not exist.
Your Mac came with 10.6.4 - you need a retail DVD with 10.6.5 or newer. (Sorry, I don't think that exists.)

So, it appears the driver(s) or other support files are unique on your mini.
Is there some reason you don't want the server features?

I want to set my display to 120 Hz refresh rate, I am not able to do so.
One of my friend has mac OsX snow leopard non server version and he is able to do so. All other hardware is same. One more difference is that he has HDMI to VGA converter which i do not have. I am using HDMI cable directly with my 3D projector, that has HDMI port.
O:)
