I am looking at purchasing an Apple Thunderbolt display to work with my 2011 MacBook Pro.

The question is whether I can use a mini-display port to DVI adapter and connect a bog standard DVI monitor at the back of the Apple Thunderbolt display (giving me a dual external monitor setup).

Good question. I would think that it would work, but don't know that for certain, since you can connect another TB display to it.

Have not found anything on the web about it and it's doubtful you'd find anyone even in the Apple store that would have any 1st or even 2nd hand knowledge about it yet.
