Open Windows and running apps

I moved to Lion about three weeks ago. When I shut down or restart my computer every application that was running open up again, even specific files on excel. If I was browsing with Safari it opens every tab i was using as well. This happens even after I shutdown every application and close tabs and quit Safari before shutting down or restarting. Does anyone know why this happens and if I can turn it off. I don't like the idea of spreadsheet with sensitive information opening up if someone borrows my computer at home.

Go to System Preferences, General. Remove the check from the box that states: "Restore Windows..................." That will do it.

Awesome. Thanks! But this is new right? It didn't happen with Snow Leopard...
