The colored replacement icons for iTunes have been updated for 10.4, and they work fine in Lion. You can get them here:
MacThemes Forum / [Theme] back to iTunes 8 --- UPDATED for 10.4!!!

Future updates should be available via that forum posting also.

Apparently that is going to be easier said than done. If I'm reading this thread right, the icons are colored, but Lion is doing some sort of live desaturation trick to make them gray.
