Your Mac's Specs
13.3" macbook pro (2010) 2.4 Ghz Core 2 Duo, 4 Gb RAM, 500GB HD.
So I connect my MBP to an external monitor, energy settings are set to 'never' sleep when it's on the battery.
I turn off the external monitor, leave the MBP on doing stuff over night and in the morning the sleep light is always on constantly until I hit a key (which seems to make it come on instantly).

Anyone got any idea what exactly it's doing?
Is it on or sleeping or what?

You didn't say, but I assume that you have it plugged in over night? You also didn't say what you have it set for "Power Adapter", so go to Apple > SystemPreferences > Energy Saver > Power Adapter (button near the top center) > Computer Sleep.

Yes, connected via a power adapter and computer sleep is set to never, I think I covered this.
