Printer Default Settings

Hi,
I have been running a Brother HL-2140 (USB connection) on my old Windows machine without problems. On a Windows machine I could set default printer settings through the control panel, e.g. to use tone saver mode, without having to set it each time I printed. On the Mac I cannot find an equivalent? I have Word and when I go to the print settings I can set what I need - but don't seem able to save them as defaults i.e. reset every time I start the program. On Preview I don't see any options at all, just Print. Under the printer selection it does offer "Presets" which is currently set as "Standard". Is there somewhere I can go to customise the options?

Way... way too many specs to list.
Set it up the way you want it, click on the arrow next to Standard and select 'Save As'
