What one new product or product upgrade would you like to see Apple come out with for this Christmas shopping season?

My number one: I would like to see an ATV3. The main improvement I want is the ability to plug in an external HD and then have an updated iTunes sharing to collect, consolidate and manage selected media onto the HD. Throw in the ability to backup via Time Machine and I am all over it. :D

The main one I'd like to see is Blu Ray (read & write) support added

I'd love to be able to backup to disks, but with between 150-180 GB of data, DVDs just aren't an option

I would quite like to see a new iPod Classic (w/iOS), Ivy Bridge computers w/BR support.

But of course, no-one at Apple wants Blu Ray to flourish. Its all focus on the Cloud.

I doubt they will pick up Ivy that quickly either.

Way... way too many specs to list.
W/R to blu-ray works, it's playback that won't. You just have to get an external burner.

That being said, I don't trust optical media for long-term storage.

Interesting, I did not know that

I wouldn't trust optical media to be my only source of backup. But i would like to have the option available at least in addition to my external hard drive
