You can use the iPad camera connection kit to hook up a bunch of audio gear to the iPad - the only problem is that they can't draw too much power.
You can get around that limitation by connecting a powered USB hub to the USB port on the connection kit and then connecting a USB powered mic / adapter / whatever to that. In practise, it's a bit fiddly though…
