What do you use? I'm currently using Avidemux, when it's simply not worth firing up Final Cut, creating a project and all that just to snip 20 secs off the start of a clip of a mate falling off his chair...

However, it's not as polished as I'd like...ideally, I'm looking for something where you can simply drop the clip onto the Dock icon and have it load up. All it needs to do is cut, crop and do some basic adjustments like brightness and contrast.

Any suggestions?

iMovie? If you only need to trim sections (beginning and end), QuickTime will do that as well (assuming you're using Snow Leopard). With the video playing, click the icon that's second from the right (looks like a box with an arrow pointing out) > Trim...

QT and MPEG won't give you brightness/contrast/colour adjustments, but iMovie will.

MPEG Streamclip does allow for adjustment of brightness, contrast, saturation and volume. When you start an export the adjustment button is at the bottom of the screen where you set the size of the movie. IMovie has more flexibility but Streamclip will work. If I remember correctly QT Pro also has this feature.

Thanks. Didn't know that.

It's easy to miss that. I had been using the program for quite a while before I got brave one day recently and clicked the button to see what was there. iMovie probably gives more precise controls but for a quick edit/change Streamclip might get the job done.
