Iphone backups

When an iPhone is synced and a backup is performed, does the backup replace the previous backup?

Is is possible to restore an iPhone with a version of its backup other than its most recent backup?

iTunes only keeps the most recent backup unless you go in and manually keep previous backups by making copies into a new location or changing the name in the current location.

Here's a simple walk through to manage your backups. Must say though, that doing a restore simply should rarely be needed. With 2 iPhones in the house for over 3 years now and the only time I've had a reason to use restore was when I decided to remove the jailbreak from one of them.
