Manipulating Scanned Documents

Hi There!
I have thousands of pages of documents that I need to scan. Once scanned, I need to manipulate these documents by replacing like words with other like words, for example: Everywhere in the document that says, "ABC company", I want to replace it with "Jones Company". I currently have VueScan for my software which has the OCR enabled, however scanning creates a PDF which I have learned cannot be manipulated. Help!! How do I get these documents converted without retyping the entire 4 storage boxes filled with binder after binder of documents.

I think Razoredge is right that Adobe Pro is your best choice. The lower cost alternatives I have tried fall down when it comes to Font matching.
Also be aware that OCRing those documents will take a lot of time as opposed to a straight PDF scan.
