I recently installed Windows 7 ultimate on my MBP, and it only recognizes my macs integrated graphics, instead of the more powerful nVidia Geforce 330m...

Have you installed the Windows side BootCamp drivers? To do this you need to insert your OSX DVD into your computer while booted into Windows, you should then be able to autorun the bootcamp drivers installer.
