default email reply settings?

Is it possible to change the default email reply settings? Over the years I’ve gotten accustomed to the Microsoft Outlook default reply settings that shows four lines of details (from, sent, to, subject).

I don’t really like the one line'r that seems to be the default on gmail, mac, and the iPhone. I also don’t like the way it indents the original email and makes it double spacing, etc.

This is totally cosmetic I know, I'm just curious to know if there is a way to change this. I’m using my iPhone at work and we have Microsoft Exchange. People can simply tell from my email reply if it was sent from my actual computer (using outlook), or sent from my phone (from the way it visually appears). If I’m not making sense, see the below examples. I prefer the first one, with the four lines of details. Can someone help?
