Currently I leave the machine running 24/7 as I find it inconvenient to have to open the laptop screen to access the power button every time I want to start the machine.

I don't want to leave the laptop open all the time either.

I am using an Apple wireless keyboard (via bluetooth connection) to type.

I've checked the Mac OS X keyboard shortcuts web page already but cannot find an answer there... (Mac OS X keyboard shortcuts)

I wonder if there is a way to configure the machine to "wake on bluetooth" (similar to "wake on LAN" functionality)?

Any pointers would be very much appreciated.

There is yes, you have to be able to, to use HengeDocks and clamshell mode.

Go to System Preferences > Bluetooth > Advanced then check mark the option "Allow Bluetooth Devices To Wake This Computer"
