I installed / upgraded from 1 gig of RAM to 2 gigs using two 1 gig chips. However when I look at About This Mac 1 gig is still showing. Shouldn't the computer recognize the two gigs? Is one not working? Or does it always show the machines default memory?

Depends if the ram you installed is Macintosh compatible. Plus we have no idea how new/old your computer is (since you didn't tell us)...thus we don't know if it can accept 1 gig sticks of ram.
