Preview lost my printer defaults

Following printing some photos using Preview [a drag since that feature was dropped from iPhoto - does iLife '11 bring it back? I don't use iMovie or Garage Band], all the documents I try to print come out very slowly due to the default having become "Photo Paper." I have to change it back every time I print anything. How do I get Plain Paper to be the default again?
I'm using a HP OfficeJet Pro K550 with the latest HP driver.
