Try using disk utility and repairing the disk and permissions

Can you click on the Apple button when this happens? If so, you have a single app that has frozen, not the entire machine. Which app is running when it happens?

Next time it happens, try using 'command' + 'option' + 'escape'. This opens the basic equivalent to Ctrl Alt Del on a Windows machine and will allow you to force quit the frozen application.
