Advanced Cookie Handling?

Your Mac's Specs
IBM PCjr, 4.77 MHz Intel 8088, 640K RAM, 5.25" Floppy, Basic Cartridge, PC DOS 2.11
Is there a way in Safari that I can manage my cookies like I do in IE? I want to list a few sites that I will accept cookies from and then only allow session cookies.

Right now I only seem to be able to accept all, reject all, or only accept what I click on.

I'm not sure about Safari, since I haven't been a Mac user all that long, but Firefox will give you that kind of control.
