I was looking through the console message log and saw quite a few messages that said "Stealth Mode connection attempt to UDP 192.168.0.2 from 192.168.0.1

The second IP address has been different at times. 3 more of them have been 68.94.156.1:53 and 209.123.109.175:80 and 205.234.225.11:80

I've also noticed this message:

network configuration changed

I know for a fact I myself haven't made any network configuration changes since setting it up to my liking. What does this all mean?

Your Mac's Specs
2012 MBP i7 2.7 GHz 15" Matte - 16 GB RAM - 120 GB Intel SSD - 500 GB DataDoubler Mac OS 10.9
I have the steal mode connection attempts in my Console logs too.
Port 53 is the DNS Lookup port, nothing to worry about.
Lets say your browser or computer sends a DNS request over that port and then forgets that it sent the request, when the requested info returns it will deny it and log it as a connection attempt.
The network configuration changed is when you wake the computer from sleep or restart and the computer loads the internet configurations.
A changing IP address can also trigger this, again nothing to worry about.
