Help me understand kindles please

is there anyway I can purchase books via kindle and have the ability to copy/paste chosen parts?

I recently got my first amazon mac app and then purchased my first kindle book, didn't seem to have this ability (unlike eBooks where you can copy/paste freely)

Is there any way i can start purchasing kindles and have this ability? I love to take whats relevant to me from books and discard the rest.
