Just configure the connection correctly on the phone and it will present itself as a modem or network to your Mac. That's how it works on the DX at least.

I use pdanet to tether my evo to my MBP for internet sharing. I am not sure about sharing the connection with the ps3, but the ping speed is all going to depend on your phone's signal strength, and if it is a 3G connection or 4G.

What I did

I rooted my evo 4G and then ran a program called un-revoked. After doing this it allows me to use a program called Wireless Tether. This then turns my phone into a wifi hotspot with out having to pay the monthly fee to sprint. Works great on average when I get 4G coverage I get about 3mbs per second when doing a speedtest.
