What exactly did you trash? iPhoto itself, or the photo's in iPhoto?
Have you actually emptied the trash too?
iPhoto has seperate trash to the dock trash can by the way.

Your photos are probably still in the iPhoto Library package in the Pictures folder.
If they are, you need to reinstall the iPhoto application from your iLife or system restore DVD.
Are you sure you didn't just pull the iPhoto icon out of the dock? Is iPhoto no longer located in the Applications folder?
