What's the keystroke to maximize a window from a minimized state?

As far as I know, it seems to vary. Basically you can use the "open x window" feature in an application and that will have maximize any windows minimized into the dock.

Example:
- Mail: Command+1 brings up the main window
- iTunes: Command+Option+1 brings up the main window, Command+Option+2 brings up the equalizer
- Echofon: Command+1

Thanks. That does work. But if I minimize Safari, and maximize it again, it always brings me back to the homepage, instead of what I was looking at when I minimized it.

Are you talking about sending the open Safari window to the Dock?
Or, do you mean resizing the window?

In either case, it shouldn't revert back to the home page. Give a little more detail about the steps you're going through so we can be of more help.

Use the Dock Expose feature to pick which window/tab you wanna look at. Or 4 finger swipe down and then choose the window you want.

I guess you could say I'm sending open Safari to the Dock. Whatever you call it when you hit CMD-M and the window shrinks out of sight (yes, to the Dock). I would just like to know the keystroke to bring it back up again and be looking at the same site I was when I minimized it.

Command+1 in Safari is the shortcut for "open first item in the bookmark bar". Command+2 is the second item and so on.

No easy solution there I'm afraid.

I think it's the mouse only for that.

If this is an important feature, you could look into something like Keyboard Maestro. It has a built-in window switcher feature that lets you choose between (and maximize) multiple windows within one application.
