Is it possible to use a USB flash drive to extract data from an old ("grape-colored") iMac running something like OS 8?

Possibly.
Most flash drives are USB2.0, those old imac's are 1.0. While the drive is backwards compatible, they draw more power.
My B&W complains about it. You might can use a powered hub and get it to work.
Whether OS 8 can access a flash drive, I'm not sure. Might be better off using ethernet on a network and another computer.

Mac OS 8.1 was the first version to introduce USB support

Transfers would very very slow but doable
