wiping second hand iphone

Hi,

I've just bought a second hand 3GS, and I want to wipe it back to factory default (almost as I don't want to lose the jailbreak).

what's the best way to do this?

MacBook Air - 128 GB SSD, 2.13GHz intel duel core, 2GB Ram
Plug it in to itunes, click the iphone logo in the left pane and click restore.
