Is there a way to set my preferences in Mac Mail to notify me when an email I send has been received and opened?

Welcome to the Forum. To best of my knowledge, not unless you set up a Script at the destination end to send an acknowledgement back to u.

You're looking for read receipts and unfortunately, they aren't easy to set up with Apple Mail. You can give this a read but there are two problems with that method: it is unnecessarily complex and it requests receipts for every message you send. Actually, I can't guarantee that this will work with newer versions of Apple Mail. Proceed with caution.
