File Structuring/Create software

Mac Pro (Late '08) 2 x 2.8GHz Xeon - 8GB RAM - 2TB HDD - 24" HD HP Monitor
I have an external hard drive that is completely filled and not organised at all. Is there any software out there that would organise, for example, all my music into one folder, all my videos into another folder and so on? Removing the original file paths and creating a new, clean one? It really looks horrible, trying to find anything or even just have a look through to see what's in it is a long a boring task! I just don't do it anymore.

You might be able to do something like that with Automator. Poke around the File manipulation options.
