I recently acquired a MacBook from a friend and have since retired my old Dell PC to the closet. I've heard of people removing their HD's and using them as portable externals. My question is, could I use the HD out of the Dell (PC) and use it as an external HD for my MacBook?

No problem. The first ex hdd I had for my Macbook was a 40 gig from my old Emachines laptop.

You definitely can, all you need is a hard drive enclosure. All depending if your old Dell is a laptop or desktop, you should get either a 2.5in or 3.5in size enclosure, respectively. Both Tigerdirect and Newegg have good deals on them.
