I'm discovering that as I continue to browse around youtube, that there are actually quite a few videos that the itouch simply will not play from youtube. Is there an app or update or something I can get that will allow me to let my itouch play more video formats?

Care to provide an example? In my experience, the YouTube app on the iTouch has played every video I've requested that it play. To be fair, you could be correct as I think the iTouch/iPhone app play the H264 version of the file so if there isn't one available, you won't be able to play it.

Had no problem playing the top 3 hits on that search.
I'm actually using an iPhone, but don't believe there would be any difference between them related to playing video.

Nor did I on my iTouch 1G. Could you provide us with a specific example? What version of the OS are you using (Settings > General > About)?
