I believe that the video card is on the logic board. Apple doesn't make any logic boards that have a better video card so there is no way you can change it out.

The logic boards of the new iMacs have better cards...though it would surely be cheaper and safer to sell the old and buy a new one, rather then trying to get a new board as spare part (very difficult to get, and surely way too expensive anyway) and then eventually mess things up when exchanging them.
