There are loads of great Apps for the Mac, but it really depends on what kind you are interested in?

Movie editing - Final Cut Express 4.0 or FCS
Photo Editing - Photoshop CS4 or Photoshop elements 8
Office - Open Office or Microsoft Office 2008
Virtual PC - I have Parallels and love it

Check Open Source Mac - Free Mac software, all open-source, all OS X. they have some good programs that are free!
