mds process taking up TONS of virtual memory

Is it normal for the process mds to take up 1.5GB of virtual memory? No other application or process takes up near this much. The closest is a java application called Aptana Studio (programming) that takes up like 350MB.

Also, is it normal for kernel_task to have 65 threads?

That sounds quite high; mine is using ~170MB of Virtual Memory at the moment, but my Mac has only been running for about an hour. mds is the workhorse for Spotlight, though, so it might increase with time or if you've been moving or downloading a lot of files. I've had it run rampant a few times in the past, using obscene amounts of real memory and CPU, and I think I just killed the process and it came back okay. Have you tried restarting, and does it regularly climb that high in VM usage?

The number of threads for kernel_task looks fine; mine's using 61 at the moment.
