question about downloads

The answer here must be easy, but I don't know it: when using Safari, is there a way to manually choose where to download files? I don't always want it set to the same folder, but it seems like in the preferences menu, that is your only option.

As far as I know, Safari doesn't allow you to choose where to save the downloaded file upon downloading. I think the intent is to have you place your Downloads folder in the Dock as a Stack for easy access. At least that's how Stacks were demoed when the feature was first introduced.

With that said, if you don't like the "feature", I would highly recommend Firefox (Safari is a pretty crummy browser in my opinion, and this is just one example where it is very inflexible compared to contemporary browsers.
