Leopard brings a whole set of new features to the Mac that Panther never had, may favourites are Spotlight search (I can launch apps from it and even look up dictionary definitions, and Time Machine - which has saved my bacon a few times)

Leopard is still supported with security updates. Panther is not.
Panther works with older, slower hardware, including G3 Macs. Leopard does not.
