Heh, two closely related posts within 5 mintes of each other. I'll paste my answer. (There may be better solutions, I use a MOTU 828 MK II)

I have never used it so I do not know how good it is, but it is probably one of the more economical solutions. Another (less economical) solution would be a MOTU 828. You could pick up a used one for a hundred and change, a used Mark II for a little more.

Actually, you will need to get the Griffin iMic. The Mini has no audio IN, if I am not mistaken. The iMic connects via USB and will allow you to connect guitars, mics, keys, etc. via an 1/4 to 1/8 adapter.
