Mac Mail:change the name displayed in 'From' field

Is there anyway to change the name that mac mail shows in the 'from' field, to the one that I want?

For example:I get a mail from my friend [email protected], that I have saved as F.S in my mac address book. In the from field it shows FRANK SMITH [why caps?]. I would like it to show "F.S" in the from field instead of anything else.[I have enabled Smart Address in the preference pane]

Go into Mail Preferences > Accounts > Account Information and what is entered in Full Name is what will be sent. You cannot change what someone else sends you. Obviously he has entered his name as 'FRANK SMITH' there.
