Install Windows Server 2003 or 2008 on my MacBooK?

MacBook Intel 2.4, 10.6.1, XP Partition | 1st Gen Time Capsule | 5th Gen 30GB iPod
Being a student sometimes has perks. Such is the case now that I have free copies of Windows Server 2003 and 2008. I've worked with 2003 and installed 2008 on a Dell PowerEdge. I'm not sure which to install on my MacBook, I know it might take a little playing with to get everything right but I essentially will not be using it but to study for certifications.

Just looking for a feedback on such experiences. I have a feeling Snow Leopard might make this more difficult than easy - regarding drivers and Windows locating the hard drive.
