iTouch - Upgrade to 3.1 from 2.whateveristhelatest

Just to be sure. The 3.1 upgrade includes the 3.0 upgrade (cut & paste, bluetooth, speed, etc...), right? I assume there shouldn't be a problem skipping 3.0.

Also, there's no way you can upgrade without upgrading iTunes to 9 as well?
I'm a little hesitant to upgrade iTunes since occasionally, upgrades tend to break things.

I'm pretty sure I did all my iPhone/iTouch upgrading in iTunes 8 -- 9 just came out recently and 3.0 and 3.1 have been out for a several weeks/months.
